6 Minute Protein Butter!

Wow! This has really rocked my socks off! This spread is ideal for crackers, corn thins, toast and fresh bread rolls- or by the spoonful when no one is looking ;)

*Can be doubled 
Ingredients & Method

200g almonds
50g pumpkin seeds
50g sunflower seeds
30g sesame seeds

Place nuts and seeds in 190º oven for 5 minutes to roast. 

Put in TM bowl. Add pinch of rock salt and pinch of raw sugar. Gradually add grapeseed oil (enough to make a smooth paste) through the lid as you blend 40 seconds, speed 8. 

Store in the fridge, up to 2 months.

Gherkin Dip in the Thermomix

This recipe comes from liz mancini on the Thermomix Recipe Community. It was really yummy so I just had to share...


Ingredients:

1/2 onion
1 tbsp olive oil
5 sweet spiced gherkins
250 g cream cheese

Method:

Add onion to TM bowl. Chop 3 seconds, speed 7. Scrape down bowl. 

Add oil. Sauté 2 minutes, 100, speed 1

Add gherkins to TM bowl. Chop 5 seconds, speed 6. 

Add cream cheese. Blend 20 seconds, speed 4. Scrape down bowl. Repeat. 

Serve with crackers or veggies. I used it as a sandwich spread too which was fantastic! Would be good spread inside of scrolls made using the basic bread recipe in the EDC too!

Bulldog Cocktail in the Thermomix

Oh, cocktail season! Try this and you will never look at a cocktail the same. It is soooo good and combines flavours you wouldn't imagine to work BUT trust me, they do. A Canadian specialty that is much loved and too good not to be shared. Cheers!


Makes 4 drinks

Ingredients:

Pineapple Daiquiri


80 g raw sugar
420 g tin pineapple, pieces or sliced, in juice
400 g ice cubes
60 g white rum
60 g contrieau

Beer


4 bottles Corona

Method:

Place sugar in TM bowl. Mill 10 seconds, speed 9.

 

Add pineapple and ice. Blend 20 seconds, speed 9.

 

Add all remaining ingredients. Blend 10 seconds, speed 9.

 

Pour into 4 large cups, leaving 3 finger widths room in each. Quickly tip the Corona into each glass, leaving the bottle to slowly empty whilst drinking!

 

**Beer haters...don't worry this is such a tasty treat you won't notice the beer :) 

Strawberry Banana 'Ice Cream' in the Thermomix

Forget about sugar loaded store bought ice cream and icey poles. On a hot day, like the 30+ week we have been having in Perth, whip this sugar-free vegan 'ice cream' for you and the kids! Pour rum or vodka into mixture and pop in the freezer for a bit should you need an adult fix ;)

Makes 1 serve

Ingredients & Method:

1 frozen banana, halved
150g whole frozen strawberries (even keep the tops on!) 
40-60g cold water

Place fruit into TM bowl. Chop into a fine mixture 20 seconds, speed 6

Insert butterfly. Add 40g of water to start and whip 30 seconds, speed 4. Scrape down lid and very top of bowl if there is any mixture left unwhipped. Add in 10-20g of water to whip in rest of mixture 10 seconds, speed 4

Voila! Serve immediately.


Tip: Put this mixture into icey pole or ice cube trays and freeze.

Vegan Strawberry Banana Milkshake in the Thermomix

Sometimes change is good. And sometimes I'm tired of my green smoothies. So, here is what I mixed up today- a frothy, creamy vegan milkshake!


Ingredients & Method:

1 ripe banana
150g fresh strawberries
150g almond milk
1/2 tray ice cubes

Put all ingredients in the TM bowl. Chop at speed 4, 15 seconds. Purée at speed 9, 1 minute.
